Rice didn't absorb very well, half was still uncooked, do I need to be stirring through out??

apologies I missed this message, you can try stirring to help, or even turning the dish around, some ovens run differently and mine actually cooks unevenly, so I do tend to take things out and turn them around halfway to cook more evenly. So that could work for you too x
