Does the value of calories not change once the rice is cooked? Sorry I always find pasta/rice confusing as I thought 87g dry rice would be roughly 260g cooked and 350 cals xx

The calories don’t change when rice is cooked, only the weight does. When you cook rice, it absorbs water, and water has 0 calories. So the same rice just becomes heavier. For example: 87g dry rice is 350 calories When cooked, that might weigh 250–270g. But it’s still 350 calories total, just spread over a larger weight. So that’s why I weigh it when it’s dry and use those calories. Xx
