For the onions, thinly slice add to a container that has a lid. Mix with the parsley, sumac, salt and lemon juice. They keep in the fridge for 1-2 days. OR if you want, you can use pre made pickled onions, but I prefer making my own as I usually have all the ingredients in.

This was stunning and tastes really fresh. Served with some parmentier potatoes to bulk it out abit and was really filling!
