Turn cooking mode on
Step 1
Rinse the rice and soak in water for 1 hour (this step is optional, but recommended for the fluffiest rice ever). When you are ready to cook the rice, drain it (if you did soak the rice), add it to a pan with the light coconut milk, water and salt. Bring to a boil, then reduce to a low simmer, cover and cook for 10–12 minutes until tender. Leave to steam with the lid on for around 10 minutes then fluff up with a fork.

One of the nicest dinners I’ve made for a long time! My husband couldn’t stop complimenting it either! So lovely! I added some cucumber to the salsa as well as some sautéed garlic asparagus too. Thank you!
